In the same way as cholic acid contained in the bile fragments lipids, the "méthodes choliques" are used to split-up the police forces.
Instead of attacking all together on the same front, which makes them more vulnerable, the rioters use the strategy of guerrillas by attacking here and there in a random way. By doing so they surprise and disorganize police forces.

ad cholique : => chol(é) = kholê (gr.) = bile -> i.e. gall and/or bile
kholê -> cf. colère -> expression au sens figuré "échauffer la bile" i.e. exciter la colère -> i.e. to be seething with discontent, with anger; cf un cholérique = un homme colérique -> i.e. a choleric person
